Hervé’s immense international cooking experience started when he was the personal chef to the Late King of Belgium. He has earned the “Les Freres Trois Gros” 3 star Michelin in France and the equivalent version “Freddy Girardet” in Switzerland. Hervé headed the King Edward Hotel in Toronto, after which he opened the Five Sails French themed restaurant in the Pan Pacific where he was instrumental in hosting the jazz nights and special menus.
Spring is just around the corner and to celebrate the Spring Equinox, the Vancouver Bailliage has visited Boulevard Restaurant at the Sutton Place Hotel. Chef Alex Chen's schedule over the past two and one half years has been full indeed: he represented Canada at the 2013 Bocouse d'Or, took the regional title in the 2015 Gold Medal Plates in Victoria and has just represented the west in the Canadian finals in Kelowna. The 2016 Chaine Annual General Meeting, Dinner and Auction, started at 5:45 pm with a brief update on the council's work and was followed by one of the culinary highlights of the year - a sumptious buffet plus gourmet foods prepared at four stations created by our own Maitre Rotisseur Executive Chef Peter Crook and his brigade. Christmas 2016 is in a very familiar setting. We joined Maitre Hotellier Elpi Marinakis-Jackson at the Wedgewood Hotel, Vancouver's only Relais and Chateau Hotel. The Vancouver Bailliage welcomed Executive Chef Simon Bolsover to Vancouver as we enjoy his take on Christmas celebration.
